Courgette & Feta Bake
As a fairly novice chef, and i use that term very loosely, i mean that i can cook & bake, just not with the talents that have been shown of late by the Masterchef super talented humans! I make mean cookies, and sometimes great carrot cakes, and marvellous savoury dishes, those these are largely thrown together with well wishes and hopeful outcomes. Even though i am a stay at home, look after the kids, the house, myself, the man, the garden, the endless mind-numbing chores therefore, i still want to find great dishes that have that wow factor but without the labour and cost. So, in my search and not so futile has it been, i have found a few that i can say would be acceptable, if not perfect for serving guests in a not so formal setting such as my home.
Number 1.
Courgette & Feta Bake
I find that following instructions difficult as my mind will endeavour to wonder and find another avenue for expressing itself, which would be finding an alternative solution to a simple recipe.
In this recipe that follows, there are:
2 courgettes
4 spring onions
8 large eggs
fresh basil leaves
pepper/salt
100g greek feta (not the goat kind)
Here i would add roasted red pepper and roasted pine nuts to the equation. Colour and nutty explosions along the taste motorway! If you wanted too and if you possibly wanted to the the route of making it look timely, then i would add a crust/pastry and then put into a rectangular dish for the oven and once cooked cut into squares.
To accompany this, and I mean alcohol, which in country frankly, i have become accustomed to the frequent visitation to the wine/beer supplies...
Number 2.
Winter Wonder Tipple
2 Lemons
200ml cherry juice
100ml vodka
100ml lemon juice
400ml merlot grape juice
100ml bourbon
crushed ice
mint
Thats it, with my twisted take... for the guests largely, and perhaps i might sample to make sure it is exact!
